Thai-style Minced Chicken

Ingredients:
• 300g chicken
• 3 bunches of cilantro
• 1 scallion
• 1 piece of ginger
• 1 shallot
• 1 clove of garlic
• 3 chili peppers
• 1/4 lime juice

Marinade:
• 1/2 teaspoon of fish sauce
• 1/2 teaspoon of sugar
• 1/2 teaspoon of cooking wine
• 1/2 teaspoon of cornstarch
• 2 tablespoons of water

Seasoning:
• 1 teaspoon of fish sauce
• 1/2 teaspoon of sugar
• 1 teaspoon of cooking wine
• 3 tablespoons of water

Steps:
1. Remove the tendon in the chicken and mince. Mix well with the marinade and marinate for 30 minutes.
2. Mince the scallion, ginger, shallot, garlic and cilantro. Chop the chili peppers.
3. Sauté the minced scallion, minced ginger, minced shallot, minced garlic and chili peppers.
4. Add the chicken in and stir fry briefly. When the chicken is half cooked, add the cilantro and the seasoning. Cook until the chicken soaks up all the seasoning. Squeeze lime juice in.
