Stir-Fried Scallops with Broccoli in XO Sauce

Ingredients:
• 1 broccoli
• 10 scallops
• 3 cloves of garlic
• 3 slices of ginger
• 1 teaspoon of cooking wine
• 1 tablespoon of XO sauce
• 1 teaspoon of sugar
• 1/2 teaspoon of salt
• 1/4 teaspoon of white pepper
Steps:
- Put the scallops in boiling water and blanch for 30 seconds to 1 minute
- Take the scallops out and dry. Pat dry with paper towels and marinate with a bit of salt, white pepper and cooking wine
- Chop the broccoli. Add a bit of sugar in boiling water and blanch for 3 minutes.
- Sear both sides of the scallops in high heat until they are golden and take them out
- Stir fry the ginger and garlic until they are aromatic. Then, add in the XO sauce.
- Add the broccoli and continue to stir fry. Put in the scallops, add sugar, cooking wine and salt. Continue to stir fry quickly for 1-2 minutes.
